It is no lie that rice is a staple in many diets across the world and that the entire world's popular is obsessed with avocado. So, it only makes sense to combine the two and create the side dish of your dreams- avocado rice.

This mouthwatering dish is creamy in consistency, tastes amazing and not to mention the health benefits! We are all familiar with the benefits of avocado- it lowers your risk of heart disease, prevents diabetes and increases healthy cholesterol. While rice is great for your skin, helps fuel your body and regulates your blood sugar. When paired with chicken or tofu, avocado rice will upgrade your meal to a perfectly balanced diet with protein, good fats and carbs.

Ingredients 
1 avocado, halved and pitted
1 lime, zested and juiced
1 minced garlic clove
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
2 cups cooked brown rice
1 cup chopped fresh cilantro
salt and freshly ground black pepper
 
Directions
1. Mash the avo in a large bowl. Add the lime zest and juice. Mix in the garlic and stir all the ingredients together. Season with the cumin, cayenne, salt and pepper.
2. Add the brown rice to the avo mix, and stir until the rice is well coated.
3. Sprinkle on the cilantro and voilà!
