This time of year really can’t be beaten. The days are long and warm, and we’re staring down the barrel of an even hotter February and March as the mercury continues to rise. Yes, BBQ season is well and truly here to stay.

With barbeques signals balmy nights spent outdoors with friends, epic platter making, fresh salads and copious amounts of meat. But what to wash all this deliciously summery food down with? A cocktail, that’s what. Luckily for you, we’ve pulled together our favourite cocktail recipes to keep those good summer vibes going in our Remix Summer Entertaining Series.

If you’re a fan of the T-N-T (a Tequila N’ Tonic for the less experienced), then this modern take will have you fizzing. Replacing tonic with Phoenix Soda Water, this refreshing cocktail features zesty grapefruit at its centre. Soda water is healthier than traditional tonics, and this Phoenix Organics version is created using artesian water sourced from the secluded, deep springs of Otakiri. Delivering a totally clean taste, this Soda Water is a favourite among spirits purists.

A MODERN TAKE ON A T-N-T, USING PHOENIX SODA WATER – makes 4

  • 120mls Tequila
  • 2 grapefruit
  • 2 Tbsp sugar
  • 2 Tbsp salt
  • 4 bottles of Phoenix Soda Water

Coat the rim of each glass with a dash of squeezed grapefruit. Mix salt and sugar together and dip the rim of the glass in the mixture. Fill glasses with ice cubes and pour 30mls Tequila into each. Delicately place rounds of grapefruit into each glass and fill to the top with soda. To serve, squeeze a generous amount of grapefruit juice for an added kick.
